Ingredients
- 1 lb steak (ribeye, New York strip, or sirloin), about 1–1½ inches thick
- ½ lb rigatoni pasta
- 1 tsp sea salt (plus more for pasta water)
- 1 tsp freshly ground black pepper
- 1 tbsp red pepper flakes
- 1 tbsp finely chopped onion
- 2 cloves garlic, minced
- ½ lb heavy cream
- 1 cup grated Parmesan or similar hard cheese
- 2 tbsp unsalted butter
- 2 sprigs fresh rosemary
- 1 tbsp high-smoke-point oil (e.g., avocado or canola)
Recipe Instructions

Pat the steak dry with paper towels. Generously season both sides with sea salt and black pepper. Insert the probe of the TempPro TempSpike Plus into the thickest part of the steak and set the target temperature to 120°F (for rare).

Bring a large pot of salted water to a boil. Add rigatoni and cook according to package directions until al dente. Drain and set aside.

Meanwhile, heat a large skillet over high heat until lightly smoking. Add the oil and swirl to coat the pan evenly.

Carefully place the steak in the skillet. Sear undisturbed over high heat for 2–3 minutes per side, until a deep brown crust forms.

Reduce heat to low. Add butter, rosemary sprigs, and half of the minced garlic to the pan. Tilt the pan and use a spoon to continuously baste the steak with the foaming butter for 2–3 minutes.

Once the steak reaches a target temperature to 120°F, transfer it to a cutting board and let rest. Do not clean the skillet.

Return the skillet to medium heat. Add the chopped onion and remaining garlic; saute for 1 minute until fragrant.

Pour in the heavy cream, scraping up any browned bits from the bottom. Stir in red pepper flakes, a pinch of salt, and black pepper. Bring to a gentle simmer.

Add the grated cheese and stir until melted and smooth. Add the cooked rigatoni and toss to coat in the sauce. Cook for 1–2 minutes until the pasta is heated through and the sauce slightly thickens.

Slice the rested steak against the grain. Serve immediately alongside or atop the creamy rigatoni. Garnish with additional cheese or fresh herbs if desired.
