Ingredients
Ribs Ingredients:
- 1 St. Louis full-slab pork spare ribs (3-3¼ lbs.)
- Pork seasoning
- Butcher’s twine
- Barbecue sauce
Mac & Cheese Ingredients:
- 1 box (8 ounces) elbow macaroni
- ¼ cup butter
- ¼ cup all-purpose flour
- ½ teaspoon salt
- Ground black pepper to taste
- 2 cups milk
- 2 cups shredded cheddar cheese
Recipe Instructions

Take a rack of pork rib and remove the membrane and season with your favorite rub. Use twine to tie it together to form a crown.

Smoke it at 250°F (121°C) for three hours.

Apply the barbecue sauce, and return it to the smoker for another two hours.

As the ribs cook, make the mac & cheese by combining butter, flour, milk, and cheddar cheese in a pan. Once it has melted down, add a block of cream cheese, salt and pepper, and then finally the cooked noodles.

Use a new TempPro TP622 Lightning Instant-Read Meat Thermometer to check that the ribs have reached an internal temperature of 180°F (82°C).

Remove from heat. Fill your crown with mac and cheese, top with bacon, and serve.
