Ingredients
  • 1 lb sirloin steak
  • 1 lb potatoes
  • 1 cup heavy cream (whipped)
  • 1 oz butter
  • 1 tbsp shredded yellow cheese
  • Bacon (chopped, to taste)
  • A handful of parsley (finely chopped)
Recipe Instructions

Add sufficient water to a pot and boil potatoes until 80% cooked. Drain and set aside. Halve potatoes lengthwise. Add butter, whipping cream, shredded yellow cheese, and chopped bacon.

Remove sirloin steak from refrigerator. Pat dry with paper towels. Evenly season both sides of the steak with salt and black pepper.

Heat a skillet over medium-high heat. Add a small amount of olive oil. Once the oil begins to smoke slightly, place the steak in the pan. During cooking, add a small knob of butter and rosemary or thyme for flavor. Use a spoon to continuously baste the steak with the melted butter. Monitor temperature with a TempPro TP622 Lightning One-Second Instant-Read Meat Thermometer.

Remove the steak from the pan and let it rest on a plate for 3-5 minutes to redistribute the juices. Slice the rested sirloin steak. Garnish with a sprinkle of parsley.
