- 2 lbs tenderloin
- 1 pear
- 1 red onion (chopped)
- 1 tsp brown sugar
- 1 sprig rosemary
- 2 tbsp butter
- 2 tbsp honey
- 1 tbsp salt
- 3 tbsp black pepper
- 1 cup red wine
- 1 cup beef broth
- 1 tbsp balsamic vinegar
- 1 piece chocolate
- 1 garlic head (2 cloves)
- ½ yellow lemon

Season the tenderloin with salt and black pepper. Marinate for 5 minutes. Insert the TempPro TP980 TempSpike Pro and set the temperature to 120°F.

Heat a cast iron skillet over high heat until it begins to smoke slightly. Add a small amount of oil and swirl to coat evenly.

Place the tenderloin in the skillet. Add garlic, rosemary, and butter. Maintain high heat and sear each side for 2-3 minutes.

Preheat oven to 375°F. Transfer pan-seared tenderloin to a baking sheet and place on middle rack.

n the cast iron skillet, combine butter, red onions, brown sugar, red wine, beef broth, balsamic vinegar, chili powder, chocolate, and salt. Simmer until thickened, then remove from heat.

Remove the tenderloin when it reaches 120°F internal temperature.

Add butter, pears, honey, and lemon to the skillet. Saute until caramelized.
